The Paresa Brownie

  • 4 eggs
  • 300 gm white sugar
  • 280 gm unsalted butter
  • 150 gm dark chocolate
  • 150 gm all-purpose flour
  • 1 teaspoon baking powder
  • 50 gm cocoa powder
  • 50 gm orange jam
  • 50 gm dried apricot (chopped in small chunks)
  • 50 gm black raisins
  • 50 gm yellow raisins


  • Beat eggs and sugar until light and fluffy.
  • Melt butter and dark chocolate over warm water and add to the egg mix.
  • With a spatula, add the flour little by little to the mix, followed by cocoa powder, jam and dried fruit.
  • Line a baking tray with oven-proof paper, pour the brownie mix and cook in a preheated oven at 170Â
