A Taste of Japan in Phuket at TAKÉ Japanese Restaurant

A charming establishment located in Cherngtalay, TAKÉ Japanese Restaurant aims to bring the freshest Japanese cuisine to Phuket island. Offering a wide variety of sashimi, massive plates of freshly rolled sushi, delicious yakitori skewers and an assortment of favourite Japanese side dishes, TAKE excels in delivering authentic tastes in the form of a superb meal.

Before arriving at TAKÉ, my dining partner and I checked out the menu and chose all of the items we wanted to order. Upon arrival, we were greeted by the restaurant’s owner who had plenty of recommendations, but also agreed with our menu choices. We ordered drinks and waited for our selected dishes to arrive.

The meal began with an appetiser of Edamame. Lightly salted, the green soybeans are one of my favourites and always a more-ish treat. Gyoza Pork Dumplings served with shoyu sauce arrived next. Delicious and flavourful, the gyoza had a perfectly authentic taste. Soon the table was covered in a variety of scrumptious dishes as we tucked into Uni Sushi, Tekka Maki, Wagyu Beef Steak, Yakitori Mori, and Una Don.

The Wagyu Beef was melt-in-your-mouth delicious, and it was fun to cook it at the table on a Mt. Fuji Stone Hot Plate. The Tekka Maki, yellowfin tuna sushi rolls, was so fresh and the wasabi gave it the perfect extra kick. We stuffed ourselves on the Yakitori Mori assortment of chicken, pork and salmon skewers. My favourite was the salted chicken skewers.

My dining partner really enjoyed the Una Don. Essentially, this is a bowl of eel sauce rice with grilled eel on top. While I don’t care much for eel, the dish was a perfect combination of flavours and the grilled eel had a wonderful smoky taste. All-in-all, the meal was nothing less than perfection – a really luscious combination of flavours with fresh ingredients and definitive tastes.

I feel the need to be honest and mention that I am often sceptical about Japanese food in Thailand. I lived in Japan for five years, and most of the Japanese dishes I’ve had here do not compare. However, much to my delight, this was not the case with TAKÉ Japanese Restaurant. The food served here is 100% authentic and it tastes amazing. Who knew that one could miss the flavour explosion of fresh wasabi so much?

TAKÉ Japanese Restaurant is open daily from 12pm - 3pm, and then again from 5pm - 10pm. Parking is available in the restaurant’s private lot or on the street. The restaurant accepts credit cards and reservations are recommended.

Method:

  1. Using a sharp knife, cut the fish into 0.5cm slices. Place on a serving platter.
  2. Serve with the soy sauce and wasabi for dipping.

Sashimi is part of Japan's gastronomic heritage and cutting skills are all-important. Not only are there special techniques for cutting fish, but specific techniques apply to different fish, revealing a particular texture and taste.

About the Chefs

About the chef: Head Chef Paisal Lhachonbot (Tom)

Chef Tom, from Udonthani, Thailand, brings 17 years’ experience to his job. Sakura Restaurant, Phuket was his first Japanese restaurant, where he worked as a Chef de Saucier for 4 years. After that, he spent 5 years Japanese Steakhouses to develop his skills, then another 4 years overseas.

After gaining 13 years of experience, he relocated back to Phuket, focusing on Omakase-style skills and was appointed Executive Chef at TAKÉ Japanese Restaurant in Cherngtalay.

Chef Tom's passion is creating authentic Japanese dining experiences for guests. His trademark is a keen ability to coax maximum flavour from a given set of ingredients, while making sure that all ingredients are top quality and fresh at all timed. Not only excellent cooking skills, but management and ethical skills are at the heart of his professional life.

He is now sharing his Japanese cooking mastery right here at TAKÉ Japanese Restaurant for all to enjoy the very best imported ingredients from Japan.
